This space has grown into something more personal, more curious and a little more mischievous. Maud.Lab is not about polished perfection. It’s about process, possibility and letting things get weird (on purpose).
Wine here is always in progress. Fermenting, shifting, surprising. Old ideas are taken apart, shaken up and reassembled into something unexpected. New techniques, new colours, new flavours. Sometimes bold, sometimes subtle, always intentional.
Think less rulebook, more sketchbook.
Less “this is how it’s done,” more “what if…?”

No snobbery. No stiff procedures. No pretending this is “very serious.” Just tasting what excites us and ditching wat doesn't.
For years, the wine world ran on the same old formula. Strict classifications, controlled conditions, flavours that behaved exactly as expected. Reliable? Sure. But where’s the surprise?
So we started poking the experiment.
A raw, bubbly reaction escaped the cellar-lab. Across Europe (and beyond), winemakers began ignoring the manual, fermenting wild, playing with skins, embracing cloudy bottles, hands-off methods and curious grapes. Less control, more curiosity. Sometimes more oops. More often more wow!
The results? Wines that feel alive. A little chaotic. Sometimes weird. Always honest. Add in wine regions without centuries of dusty lab rules, and suddenly wine feels risky again in the best way possible.
The only way to understand the experiment?
Taste it.
